I set up Live Agent a couple years ago for a pilot, which ended up getting shelved, so my hands-on experience with Live Agent is limited to just a few months. However, I can tell you that when I set it up, the chat transcripts were NOT encrypted. They were simply stored in long text areas, and could be viewed by anyone with access to those records & that field.
