Can I track cost of sale?

I'd like to track the amount of money I will need to spend in order to fulfil the order.

You probably want to create custom fields on the Opportunity, Product, and/or Asset (if you are using them) then you can create custom Formula fields that subtract your "Costs" from your Opportunity Reveune so that you can track your margins
