I have a custom object that appears to no longer be used. Rather than go to each profile and restrict access to it (as there are several), is there a way I can restrict access to the object while keeping its related records/data intact in one action?

One approach would be to move the Deployment Status of the custom object to "In Development"
Doing so hides it from users while you are designing and testing it. Only users with the Customize Application permission can see the object tab, search results, related lists, and report data types.

You can update the Object Permissions on multiple Profiles from the Setup & Config using a Profiles List View
