I dont think, you can see a picklist for changing permssions. You can see a picklsit when youre creating sharing settings.
Before further, do you have these permissions or are you a admin?
USER PERMISSIONS NEEDED
To view roles and role hierarchy: View Roles and Role Hierarchy
To create, edit, and delete roles: Manage Roles
To assign users to roles: Manage Internal Users
If you have above permissions/you are admin then you can edit a role by going to
Set up>roles>expand all roles? edit anyone role. if you have above permissions you will see below screen. There you can change the role permssion.
if youa are talking about partner roles, then you will see bunch of picklsit values there. Even same thing with account roles, Opportunity Contact Role, Case Contact Role and Contract Contact Role. These are availabe when yousearch for them thru set u[p.
