I have a custom Record with Picklist field 'stage'. I have set 'Initiated' as default value but it doesn't keep the value as selected in Create New. I want to set Inititated stage for newly created record.

Please verify these steps if you're not getting the default value for your Stage field.
You can set the picklist value to default on that field by checking the default checkbox.
For Instance: I had marked English as the default value for the Subject field by clicking on the edit before that value and marked that default check box true and saved it.

And If your mentioned object has record types then please follow the mentioned steps below to verify the default value set or not for the Stage field.
1. Go to Setup.
2. In Object Manager, Open your Object.
3. Open the record type for which you want to set the default value of the picklist field.
4. Edit the picklist field present under the Picklist Available for Editing.
5. Select the value that you want to make as default for the Default dropdown.
6. Click on Save.
