Encoding consideration for data export

Dear All, 

I wish to do a back of my org , knowing that we have records in english , other in Chinese or german.

Meaning that we have a lot  of special  characters.

I am thinking going with UTF 8 but i want to know if any of experience a back up with multiple language and what encoding they choose and why?
