Our organisation is both B2B and B2C and we are struggling to find the best fit for creating B2C accounts without using person accounts. We have thought about creating a "master" company for all B2C customers and associating with that company. Any suggestions would be greatly appreciated.

When you enable PersonAccounts, you get both.  You have all the normal B2B Account/Contact relationships, but you also get the benefit of having 1 record for your B2C customers.  There are some things to be aware of for Person Accounts, but the only 2 I have ever had to actually worry about were:

    1) Some AppExchange / 3rd party apps don't integrate nicely with Person Accounts

    2) Sharing Settings for Contact becomes 'controlled by parent' and can't be changed.

Even if you enable PersonAccounts, when you create a new Account, the Account Record Type determines if it is a PersonAccount or a BusinessAccount.  If you never made any Account records assigned to a PersonAccount record type, you'd have a B2B data model.
