How do I add the "Amount" field in the "Field to Aggregate" drop down when creating a custom Roll-up Summary field?

I'm trying to create a custom field to Roll-Up & Summarize the "Amount" field from all Opportunities/Quotes of a particular Account.  When I get to the part to select a "Field to Aggregate" the standard "Amount" field is not there.  Can someone please tell me why or how I can add it?

    I cannot find the manage currencies option in quick find,is it moved to somewhere else ?

    Cause I don't want to create a new playground.
