How do I move my Opportunity Stage picklist values to Inactive?

I'm using the Professional Edition. I'd like to move my existing Opportunity Stage picklist values to Inactive, so that I can create a new picklist with different values. But I don't see a "move to inactive" option anywhere on the field detail page.

    Matthew, that's where I am, and I see the list of picklist values, but there's no option to move them to Inactive.
