Report that shows Count of newly created Opps or Leads (within this week) that we've also had 1 meeting with

I'm trying to create a report that shows count of newly created records (aka this week) that we've had 1 meeting with (aka Intro Meeting)

The issue is that if I create a lead report, if we happen  create a lead --> then had a meeting with it --> converted into an opportunity ---  that meeting is no longer captured in what we are currently referring to as our "Intro Meetings This Week" report, which is currently a 'Activity w/ Leads' report type. But we're missing all the leads we converted into opportunities
