Although, when the dashboard is emailed and the user views the email, the columns don't line up anymore. Any thoughts on how to modify this so the format is the same in the email as what a user sees on their SalesForce.com via PC?
I also noticed, if I view the email on my phone, it removes all formatting and just gives me a string of #.s that are in the dashboard. It makes it extremely hard to read at that point.

The email version of reports and dashboards are not ideal at all- sometimes necessary of course but they're really designed to be used within Salesforce. You could adjust the dashboard and try different methods to improve it but there's no guarantee it'll look right on every device you need it to. (your phone for example, that could be settings on your phone, email server for mobile- multiple places)
Are you looking to show trends? Could a chatter alert be better and more real time? A task for them to view the dashboard at certain times? I would focus my effort on getting them off the emailed dashboards and find another means of getting them the detail they're looking for if at all possible. Perhaps someone else may have some additional tricks with the formatting. My only trick would be to strip it down to one column, maybe try two, and see how that goes. There's not any control over the formatting of those emails.
