Is it possible to do a "factory reset" of our entire platform?

The time it would take for a 'reset' would not be worth it. You can easily delete all your data (not the users) using data tools, but from there, it would be much easier to start building what you need. You can always hide fields using page layouts, record types, etc.
If you wanted to get rid of nearly everything, you'd have to do it sequentially so you were deleting everything that used other things before you try to delete the things they are using (dependencies). It would take a long time.
