Most I can easily correct, but when it gets in the organization name and I try to edit it, it just goes back to the way it was. Does anyone have any ideas? I'm at a pretty low skill level.

It could be from someone merging duplicate contacts. I would ask your administrator to turn on Field tracking for these select Contact fields and the next time you see it happen, you will know who is doing it so you can see what they are doing to cause it.
