I have two tables - folders and displays. Many displays are put in more than one folder, and many folders have obviously more than one display in them. I'm not sure 1) how to create a simple relationship diagram in tableau or 2) if that is the best way to visualize a many to many relationship at all. I have many folders and many displays, so a Sankey would probably be visually confusing.

It might depend a little on what you're trying to achieve.
A network diagram might help where your folders and displays are nodes and the relationships are joins. You could colour folder nodes differently from display nodes. This visualisation isn't native to Tableau but there are ways to achieve it.
One thing you could quite quickly try is a heat map. Folders on rows, Displays on columns. Some attribute about the relationship on colour and lable. You might then be able to do some sorting on the Folders and Displays to spot some patterns emerge.
