I cannot create the second user for Alex Woszniak as I do not have an additional salesforce license. So, this means in the "Control Access to Price Books and Products"
module I cannot test as Alex Wozniak and it will not let me move on. Please help correct this.

Update your user record for "Ian Lin" as per the instructions. You will then have an extra license for Alek Wozniak.
That won't work in this case. I only have 2 licenses in the org. One is set to me as the administrator and one is set to one of the required users to create. In order to create the second user I would have to deactivate myself to be able to assign. But I don't think I can do that. Can I do that?

Looks like you ran out of Salesforce Licenses. You can deactivate a user with Salesforce license in your org and create the user record with details you listed above.
Go to Setup>Users and check users with License Type as Salesforce in the list view of available users. Identify a user who is not required for this challenge, Edit and uncheck the Active button on the record and save. This will help you to free up a Salesforce License.
