Specifically I don't have the option of "Salesforce" in the "User License" dropdown, which then prevents me from seeing the "Minimum Access - Salesforce Clone" profile I have created. I cannot complete the challenge as it currently stands. Has anyone else experienced this, or know of a solution to work around? I don't want to submit without being sure it's right as I don't want to lose credit for the work I've already put into this.

@Sam Priddy, that means both (your and an another user) is using the available 2 'Salesforce' licenses in your practice/playground org.
Locate the other user using it and deactivate it. This will release one 'Salesforce' license which you can use to proceed further.
