Our Salesforce Org has exceeded the storage limit due to "sync emails with the crm” which was enabled in Pardot. I am in the process of deleting the historic tasks using the criteria Activity date less than July 2020 for example. Can someone clarify to me that I have to use Activity date right instead of Created date?

If the created date is greater than the Activity Date, it sounds like the Pardot sync is grabbing historical emails and recreating them. In that scenario, it sounds like in January 2020, the connector synced an email that was sent back in Aug. 2019. I think you're correct in wanting to use Activity Date as the filter here because that should reflect the date of the actual email, so if you want to remove all emails that were sent prior to July 2020, using Activity Date as your filter should be fine. You could also do a full export prior to deleting anything just to be safe.
