What are the advantages/disadvantages of creating a custom field on lead and mapping to contact versus editing picklist values and/or labels for standard fields

Question

If I understand correctly I can:

create custom fields , map them to contact fields, and hide the standard fields in the lead object layout

OR

edit values and/or labels for standard fields.

Which should I do and why?

It really depends on why you are doing it.     Can you explain what the fields and the values are, and how the information is going to be used both pre and post Convert?
