When going to set up the rules I do not see the Product Name field which is what I was hoping to use to filter. Here is a snip of what the product information shows for a specific product:
That product name field does not show up when i look to set up my roll-up summary field. Any suggesstion as to if this is possible and how to do so?

Arun, this is what you could do:
1. Create a workflow and field update on Opportunity Products to update a text field with the Product Name. The sole intention of doing this is to populate a custom field with the Opportunity Product Name so that you could use it in the Rollup Summary criteria. Do not forget to Activate the Workflow Rule!

2. For existing Opportunity Products to run this workflow, perform field update and populate the custom field(Product Name for RUS), you will either have to manually edit the Opportunity Product or update all records using the Data Loader.
3. Finally, create the RollUp summary field where you will be able to select the above custom field:
