We're deploying about 160 changes, custom objects, custom fields, code, layouts, profiles, workflow and we're at the stage where the eclipse deployment tool has validated the components against the live system.
My question is, will this then definitely deploy onto live without any problems or if not, what sort of problems can arise when doing the final deployment?

If you have validate it in production system it should be safe.
But, you still need look into profile permission manually.
