We are using the Description field in Opportinities quite often -
It is easy to control Bold, Italic, underline and more - but I can not see any thing allowing me or the users to change font size or fint type. Is there some setting I can select to allow this ?

Unfortunately not. The rich text editor is a little limited in terms of what it allows you to do with font sizes, font styles etc. You can vote up for the idea here:

Your best bet will be to go through the comments under the above ideas and check if you can find something (an app or package) that helps you get past the limitation.
