Accroding to this help page it seems one is able to @mention a chatter group in a Process Builder action but it doesn't actually say how to do so or explain what the correct syntex is:

I created a text field with the id of the chatter group as a default value. You can customize the formula in default value formula to set different group ids based on any condition ,etc.
