I have added a new field to the Product and can see it in Search Layout but I need it to pull through to the Opportunity Product

You can create a formula field on the Opportunity Product and the formula will be

PricebookEntry.Product2.Custom_Field__c

Please use the insert field button to select the field API Name of your custom field on the Product Object.
