We have 3 price categories
Software, Hardware, Professional Services.
I need to create 3 fields which would calculate the totals when the products are added to the quote i.e 3 hardware products added and are all £500 which would be £1500. i need all 3 fields but unsure the best route to do this? Any thoughts?

Have you considered using a filtered Rollup Summary field for this? You can read more about them here.
